Salads
Ingredients:
- 10 oz ounces baby spinach leaves
- 1/2 cup fresh basil leaves
-- cut in thin strips
- 2 beefsteak tomatoes
-- cut thinly crosswise
- 1/2 lb part-skim mozzarella -- diced
- 4 tsp fresh oregano -- chopped fine
- 4 tsp balsamic vinegar
- 4 tbls olive oil
- Kosher Salt
- Ground Black Pepper
Directions:
Alternate layers of spinach
and tomato across plate.
Top with basil, mozzarella,
and oregano. Dress with oil
and vinegar. Season with Salt
& Pepper to taste.
Serves 4 as Entree,
Serves 6 as a side dish.
